Caribbean Chicken Dinner
Hal & Jo's Caribbean Chicken Dinner
Ingredients
4 skinless/boneless chicken breasts
1/2 cup Low Calorie Peppercorn Ranch Dressing
1 tsp black and red pepper
1 tsp hot pepper sauce
1/4 tsp garlic powder
1/4 tsp curry powder
2 green onions, chopped
Method:
Mix all ingredients (excluding chicken) in baking dish. Take 2 tbsp of mixture, set aside to use later.Marinate chicken in the remaining mixture and refrigerator for about 30 minutes. Broil chicken on each side until done and baste with remaining marinade. Then serve over rice and peas.
