Pasta Primavera
Pasta Primavera Recipe
Jo's Pasta Primavera


Ingredients

3/4 cups (175ml) skim milk
1/2 cup (125ml) Hellmann's/Best Foods Reduced Fat Mayonnaise
2 tbsp (25ml) water
1 carrot, cut into thin strips
1 zucchini, cut into thin strips
1 red/green pepper, cut into thin strips
1/4 tsp (1ml) each: dried basil, salt, black pepper (you can also add other spices)
4 cups (1000ml) rotini noodles, cooked
parmesan cheese

Method:

Whisk skim milk and reduced fat mayonnaise. Saute in non-stick skillet water, carrots, zucchini and peppers until soft. Combine liquid mixture to skillet and Add dried basil, salt and black pepper. Stir until heated but don't let it boil. Mix with cooked noodles and sprinkle with parmesan cheese. Makes 2-4 servings
