Frittata Sandwich Recipe
Hal's Frittata Sandwich
Ingredients
1/2 cup (125ml) Egg Beaters
1 tbsp (15ml) skim milk
1 tbsp (15ml) red pepper, diced
1/4 tsp (1ml) ground black pepper
2 tomato slices, diced
1 tbsp (15ml) onions, diced
4 slices Whole Wheat Bread
Method:
In a small bowl, lightly whisk Egg Beaters , milk, and ground pepper until foamy. Then add onions, tomatoes, red pepper pieces. Pour beaten mixture into small non-stick frying pan. Cook over medium heat until almost set. Lift the sides to allow uncooked portion to flow underneath. Cover with a lid; turn heat off and let stand 2-3 minutes until desired firmness. Cut in half and place one piece on whole wheat toast. Makes 2 sandwiches.
