Jo's Apple/Yam
Bake
1 cup skim milk
2 yams, peeled and cubed
1 tsp Cinnamon
1/4 cup low fat sour cream
1/2 tsp pepper
1 apple, peeled and sliced
1/2 cup seedless raisins
In a saucepan, heat on medium, add skim milk and cinnamon.
Simmer then add yams and turn heat
to low and cover until tender, stir occasionally.
Mash the yams and stir in low-fat sour cream and
pepper. Spray bake dish with non-stick spray, arrange
apple slices and raisins, top with yam mixture.
Cover with foil and bake at 350 for about 15-20 minutes.
Makes 4 servings.
