Jo's Chocolate Cake


3 cups sifted pastry flour
1 1/2 cups sugar
1 1/2 cups cocoa powder
2 1/2 tsp baking soda
1 1/2 tsp baking powder
1 tsp salt
6 egg whites
2 1/2 cups skim milk
2/3 cup corn syrup
1/2 tin cherry pie filling
low fat/calorie whip cream (as little as possible)

Combine the dry ingredients. In another bowl, combine egg whites, skim milk and corn syrup. Add
the liquid mixture to the dry ingredients and mix until smooth. Spray 2 round baking tins with
non-stick cooking/baking spray and evenly pour mixture into tins. Bake at 350 F for 30 to 45 minutes
or until the toothpick inserted in center comes out clean. Completely cool. Spread cherry pie filling
for the middle layer and cover with whip cream.
