Hal's Apple
Bran Muffin Cookies
2 egg whites
1/2 cup (125ml) brown sugar
1/3 cup (75ml) light margarine
1 cup (250ml) Post 100% Bran Cereal
1 cup (250ml) unsweetened apple juice
1 apple, diced
1\2 cup (125ml) raisins
1 cup (250ml) all-purpose flour
1 cup (250ml) whole wheat flour
1 tbsp (15ml) Magic Baking Powder
2 tbsp (25ml) cinnamon
Whisk together egg whites, brown sugar and light
margarine. Stir in 100% Bran Cereal and
unsweetened apple juice and let stand for 5 minutes
to soften. Then add apple pieces and raisins.
Mix remaining ingredients in another large bowl.
Stir cereal mixture into dry ingredients, blend
just until moistened. Spoon out enough for 16
cookies and bake at 350 F (180 C) for 15-20 minutes
or until browned. Cool and store in airtight container;
freeze if desired. Low in fat and a good
source of fibre.
