Jo's Quick Soup
1 can (48oz/1.36L) low sodium tomato juice
1 can (19oz/540ml) Del Monte Chunky Pasta Style Stewed
Tomatoes
1 cup (250ml) celery, chopped
1/2 cup (125ml) green pepper, diced
1 can (14oz/398ml) green beans
1 can (14oz/398ml) carrots
1 can (12oz/341ml) corn niblets
2 tsp (10ml) ground black pepper
2 tsp (10ml) garlic powder
1 cup (250ml) Catelli Healthy Harvest Macaroni with
added Fibre
1 tbsp (15ml) parsley
In large saucepan, bring juice, tomatoes, celery,
green pepper, beans, carrots, corn, black pepper
and garlic powder to a boil. Add macaroni; cook, stirring
occasionally for 20 minutes or until
macaroni is tender. Just before serving, stir in parsley.
Makes 8 servings.
