Hal's Black Bean
& Rice Salad
2 tbsp (10mL) water
1/2 cup (125mL) green pepper, chopped
1/2 cup (125mL) onions, chopped
1 tsp (5mL) minced garlic
1 tsp (5mL) chili powder
1/4 tsp (1mL) black/red pepper
1/4 tsp (1mL) dry mustard
1 can (19oz/540mL) black beans, drained rinsed
1 can (19oz/540mL) tomatoes, diced
2 cups (500mL) cooked rice
Electric skillet on
medium heat, add water, green pepper, onions, garlic,
chili powder,
pepper and mustard. Sautee until onions/green pepper
are soft. Add black beans
and tomatoes and simmer for 10 minutes. Add rice or
serve over rice later (hot or cold).
