Beef Stirfry

Sesame Ginger Spaghetti and Beef Stir-Fry. Beef and pasta combine for a nutritious energy filled meal. If there are leftovers, they're great served cold as a pasta salad. Preparation Time: 10 minutes Cooking Time: 6-10 minutes
Ingredients
Catelli Healthy Harvest Whole Wheat Spaghetti or fine noodles 8 oz    250 g
Beef Stir-Fry Strips or Top Sirloin Grilling Steak, cut into strips 1 lb    500 g
Rene's Gourmet Naturally Light Sesame Ginger Sauce 1 cup    250 ml
small cooking onion, sliced 1    1
International or Chinese-style frozen mixed vegetables (or 4 cups/1L sliced assorted fresh vegetables) 1 pkg    500 g
large red or green bell pepper, cut in thin strips 1/2    1/2
oyster, shiitake or crimini mushrooms, sliced 1/4 lb    125 g
grated light cheddar cheese 1/2 cup    125 ml
light Parmesan cheese 1/4 tsp    50 ml

Directions
Step 1 Prepare spaghetti according to package directions.
Step 2 Add 2 tbsp (30mL) of Rene's sauce to beef strips. Heat a lightly oiled non-stick pan or wok over medium-high heat and stir-fry strips for 2-3 minutes. Remove beef from pan and set aside.
Step 3 Bring pan back to medium-high temperature. Add onion and stir-fry until softened. Add other vegetables and stir-fry for 2-3 minutes.
Step 4 Reduce heat and cover for 1 minute. Add remaining Rene's sauce and coat vegetables well. Return beef to pan and stir-fry until beef and vegetables are hot. Serve immediately over pasta or rice. Makes 4 servings
