Date/Oatmeal Muffins

Ingredients
oatmeal 1 cup 250 mL
hot water 1 cup 250 ml
vegetable oil 1/2 cup 125 ml
eggs 2 2
baking soda 1 tsp 5 mL
salt 1 tsp 5 mL
vanilla 1 tsp 5 mL
whole wheat flour 1 cup 250 mL
chopped dates 3 cups 750 mL

Directions
Step 1 Soak oatmeal in water, add dates and after cooling a little add oil, beaten eggs, and vanilla.
Step 2 Then mix all dry ingredients together; and add to wet ingredients; and stir until combined. Do NOT over beat; as this will cause the muffins to be tough and funnel tops. Bake at 325 for about 30 minutes ~enjoy~
