Soak oatmeal in water, add dates and after cooling a little add oil, beaten eggs, and vanilla. |

Then mix all dry ingredients together; and add to wet ingredients; and stir until combined. Do NOT over beat; as this will cause the muffins to be tough and funnel tops. Bake at 325 for about 30 minutes ~enjoy~ |
