Frittata Sandwich Recipe

Hal's Frittata Sandwich
Ingredients
Egg Beaters 1/2 cup    125 ml
skim milk 1 tbsp    15 ml
red pepper, diced 1 tbsp    15 ml
ground black pepper 1/4 tsp    1 ml
tomato slices, diced 2    2
onions, diced 1 tbsp    15 ml
Whole Wheat Bread 4 slices    4 slices

Directions
Step 1 In a small bowl, lightly whisk Egg Beaters , milk, and ground pepper until foamy. Then add onions, tomatoes, red pepper pieces.
Step 2 Pour beaten mixture into small non-stick frying pan. Cook over medium heat until almost set.
Step 3 Lift the sides to allow uncooked portion to flow underneath. Cover with a lid; turn heat off and let stand 2-3 minutes until desired firmness.
Step 4 Cut in half and place one piece on whole wheat toast. Makes 2 sandwiches.
