Hiking Muffins

Ingredients
boiling water 1 cup 250 mL
egg 1 1
Post 100% Bran Cereal 1 cup 250 ml
raisins 1/2 cup 125 ml
light butter or margarine 1/3 cup 75 ml
2% or 1% or skim milk 1 cup 250 ml
liquid honey 1/3 cup 75 ml
all-purpose flour 1 cup 250 ml
whole wheat flour 1 cup 250 ml
Magic Baking Powder 1 tbsp 15 ml
cinnamon 1 tbsp 15 ml
salt 1/2 tsp 2 ml

Directions
Step 1 Pour boiling water over cereal, raisins and butter/margarine in bowl; stir until butter/margarine melts. Cool.
Step 2 Add egg, milk and honey; stir well. Mix remaining ingredients in another large bowl. Stir cereal mixture into dry ingredients, stirring just until moistened.
Step 3 Spoon mixture into muffin cups, generously filling each to the top (non-stick muffin tin or line tin with paper baking cups)
Step 4 Bake at 400 F (200 C) for 20-25 minutes or until browned. Cool on racks. Store in airtight container; freeze if desired.
Step 5 Makes 12 large muffins which provide you with a good source of fibre and are low in fat.
