Italian Wedding Soup

Ingredients
Meatballs:
Ground turkey 1 lb 454 g
salt 1/2 tsp 2.5 ml
Freshly ground pepper 1/8 tsp .5 mL
Small onion chopped 1 1
egg 1 1
garlic clove 1 1
Soup:
low sodium chicken broth 5 cups 1250 mL
Thinly sliced carrots 1/2 cup 125 mL
Thinly sliced celery 1/2 cup 125 mL
Thinly sliced green onion 1/2 cup 125 mL
basil 1/2 tsp 2 mL
Very small noodles (i.e. orzo; tubettini or stelline) 1/2 cup 125 mL
Escarole or spinach, chopped 1/2 pound 230 g

Directions
Step 1 To make meatballs: Preheat oven to 400 F. Combine all ingredients and mix well. Shape into 1 inch balls and place in shallow baking pan. Bake for 15 minutes or until browned. Place on paper towels to drain any fat.
Step 2 To make soup: Combine chicken broth; carrots; celery; onion and basil in a large saucepan. Bring to a boil, then reduce heat. Cover and simmer until vegetables are almost tender.
Step 3 Bring to a boil; then reduce heat. Cover and simmer until vegetables are almost tender.
Step 4 Add noodles; chopped escarole or spinach; and meatballs. Simmer 10 minutes longer. Serve with a side of parmesan cheese and toasted garlic bread.
