To make meatballs: Preheat oven to 400 F. Combine all ingredients and mix well. Shape into 1 inch balls and place in shallow baking pan. Bake for 15 minutes or until browned. Place on paper towels to drain any fat. |

To make soup: Combine chicken broth; carrots; celery; onion and basil in a large saucepan. Bring to a boil, then reduce heat. Cover and simmer until vegetables are almost tender. |

Bring to a boil; then reduce heat. Cover and simmer until vegetables are almost tender. |
| Step 4 |
Add noodles; chopped escarole or spinach; and meatballs. Simmer 10 minutes longer. Serve with a side of parmesan cheese and toasted garlic bread. |
